Gluten-Free & No Sugar Added Banana Bread Muffins
As you all know, I'm always trying to create lower-carb recipes so this one is my take on banana bread! These banana bread muffins ended up being about 12 net carbs per muffin, so it's not exactly carb-less but it is quite lower than your average banana bread or muffin. PLUS there's no added sugar, they're gluten-free AND it has tons of fiber, so it will keep you feeling healthy!
Pro-tip! My must-have item for all low carb baking is Swerve Confectioners. It's really been a game-changer and makes all of my sugarless recipes taste so good and not have that "diet" flavor.

Dry Ingredients
- 3/4 Cup Stevia
- 1/4 Cup Swerve Confectioners
- 3/4 Cup Almond Flour
- 1/2 Cup Coconut Flour
- 1 Teaspoon of Cinnamon
- 1/2 Teaspoon baking powder
- Pinch of Salt
Wet Ingredients
- 3 Bananas
- 1/4 Cup Butter
- 2 Eggs
Gluten-Free Banana Muffin Instructions
Preheat your oven to 350 degrees. Mix all of the dry ingredients until they're completely combined. Melt the butter and softly beat the eggs, then add both to the dry ingredients and mix. Add the bananas to the mixture in large chunks and lightly combine. Pour into greased muffin tins. Bake for 30 mins.
